How to make Ghana waakye a.k.a ( colored rice and beans ) with it sauce
The waakye dish is a well-eaten dish amongst Ghanaians, it shito a.k.a ( Hot pepper sauce) with stew makes it an undeniably delicious meal that can't be resisted no matter how hard you try. I can remember my first time tasting this dish, I drank lots of water due to the spiciness of the shito ( Hot pepper sauce) but in the end,
I loved it. So without further ado, let's dive right into my amazing and mouth-watering recipes needed to make this dish.
Waakye ( rice and beans) ingredients
• Rice
• Black eye peas ( Cowpeas)
• Salt to taste
Preparation process
Pick your black-eye peas ( Cowpeas )
Thoroughly and then wash in a bowl transfer to a pot with clean water, wash
your sorghum ( millet leaves) thoroughly and place inside the pot containing the black eye peas ( Cowpeas), add salt according to preference, and put on fire. Let it boil till it is soft and tender then wash your rice thrice and add inside black eye peas ( Cowpeas) let it boil till rice is soft the rice and beans will eventually give a reddish-brown color this is the identity of true waakye. After which you then remove from the fire and our waakye is ready. Now let's get to making our shito ( Hot pepper sauce).
Shito ( Hot pepper sauce) recipe
• 2 large onions
• 6 cloves of garlic
• 100 g of ginger
• 2 cups of dried shrimp
• vegetable oil
• dried red chilies
• 1/2 teaspoon of black pepper
• salt
• chicken/ beef seasoning
• 1/2 teaspoon of dried rosemary leaves powder
• Anise seed
• 4 Scotch bonnet pepper
Preparation process
Peel the two large onions and chop them into smaller sizes. Add the chopped onion,
6 cloves of garlic, 100g ginger, 2 cups of
dried shrimp, dried red chilies, 1/2 teaspoon of black pepper, 1/2 teaspoon of dried Rosemary leaves, scotch bonnet pepper, and anise seed in a blender and blend without water till a paste is formed. Scoop out from the blender into a clean hollow plate and set aside.
Heat a pan, add vegetable oil, and pour blended ingredients inside, then add chicken/beef seasoning and salt to taste. Stir fry till a dark brown color is achieved and
do not add water in other to get the crunchy and fried taste. After this drop from the fire our shito (Hot pepper sauce is ready ).
Waakye stew recipe
1) 5 tomatoes
2) 4 chili pepper
3) 5 Scotch bonnet
4) 3 Bell pepper
5) 1 large onion
6) 6 paprika pepper
7) crayfish powder
8) Chopped onion
9) Boiled/ Fried Assorted meat
10) 2 Boiled eggs
11) Chicken/ beef cube
Preparation process:
Add paprika pepper, chili pepper, scotch bonnet, bell pepper, onion, and tomatoes in a blender and blend thoroughly with little water.
Then scoop out this blend into a bowl, place a frying pan on fire and allow to heat up, add vegetable oil into the frying pan. then add your chopped onion and crayfish to the oil and stir fry for 1 minute to disperse the crayfish and onion taste into the pepper sauce. Now add your blended pepper mix to oil and stir then add your chicken/ beef cube, and salt to taste.
Allow pepper sauce to fry for 20- 25 minutes then add your boiled/ fried assorted meat with egg into the sauce and allow to cook for 5 - 10 minutes. Then take off from the fire and our waakye stew is ready. Serve while hot. And enjoy your meal.
